Cabernet Sauvignon

Description: The reigning king of Chilean grape varieties. It has plentiful tannins and anthocyanin naturally in the skin of the berries, so it is a wine with an intense colour, lots of tannins which gives it a full-body, well structured and astrigent wine. Great for ageing.Origin: Bordeaux

Hectares: 40,766, Most produced with 38% of total production.

Requirements: Needs a warm climate for cultivation. Stony, well drained slightly acidic soils.

Valleys: Has great results in Aconcagua, Maipo, Cachapoal and Cochagua. Maipo Valley has gained international recognition and is where many of the first Chilean icon wines originated from.

Tasting notes:Colour: Most have a deep ruby colour.

Aromas: When it is young, it has an intense aroma of red fruits like cherry, backberry, strawberry, tobacco and cassis and when aged develops an intense bouquet of cedar, truffle, leather and menthol notes.

Palate: A red wine variety with more body and tannins. It is astringent, big volume, powerful and juicy on the palate, with many red and black fruit notes.  Very good ageing potential. The oak can add vanilla, coffee, pepper and chocolate notes.

Pairing: Chilean Cabernet Sauvignon is characterized by its structure, full body and juiciness. Great accompaniment to: 

  • Fatty meats: lamb, sausage, wild boar, duck
  • Aged cheese
  • Braised meats, casseroles.
  • Chocolate
